  1. Take 1/2 litre chicken stock
  2. Prepare 5-6 kaffir lime leaves
  3. Take 2 stalks lemongrass (only the white part to be used)
  4. Prepare 1 inch galangal (Thai ginger), sliced
  5. Get 2 green chilies
  6. Take 1 tsp. tomato paste
  7. Prepare 1 tbsp , tomato sauce
  8. Make ready 1/2 cup mushroom, sliced
  9. Take 1 tsp. red chilli powder
  10. Make ready 1/2 cup prawns / shrimps, cleaned & deveined
  11. Prepare to taste salt
  12. Take 1/2 juice of 1/2 lime
  13. Make ready 1 tsp. coriander leaves to garnish

At first sip of this Thai tom yum soup, you'll be overcome by the intoxicating flavors of lemongrass, garlic, lime, coconut milk, and chile combined with a chicken stock base and topped off with shrimp. Combine vegetable broth and shrimp in a pot over medium-high heat. Remove shrimp from the broth and remove and discard shells; set shrimp aside. Melt the coconut oil in a large pot over medium heat.

Steps to make Tom Yum Soup:
  1. Bring the stock to a boil. Then add the kaffir lime leaves, galangal and lemongrass. Simmer on a low flame for 7-8 minutes.
  2. Add rest of the ingredients (except lime juice & coriander leaves). Simmer further for 3-5 minutes.
  3. Drizzle lime juice. Garnish with coriander leaves & serve as a light meal.

Remove shrimp from the broth and remove and discard shells; set shrimp aside. Melt the coconut oil in a large pot over medium heat. Add the vegetable broth, tomato, lime leaves, coconut milk, and soy sauce and stir to combine. Best enjoyed as an accompaniment on the dining table with several other Thai dishes. It is traditionally served in a metal hot pot stove with a flame underneath to retain the heat.
