- Take 1 tbls sesame oil
- Get 2 cloves garlic, minced
- Get 1 tbls freshly grated ginger

- Prepare 1 cup mixed greens or 2 baby book choy or both

- Take 8 oz medium shrimp, peeled, deveined and diced
- Get 2 cloves garlic, minced
- Take 2 green onions, thinly sliced

- Make ready 2 tbls soy sauce
- Make ready 1 tbls freshly grated ginger
- Take 1 tsp sesame oil
- Make ready 1/2 tsp Sriracha, optional

- Get 36 (2 inch) Wonton wrappers

- Heat 1 tbls sesame oil in a large stock pot or Dutch oven over medium heat. Add garlic and ginger, and cook stirring frequently, until fragrant, about 1-2 minutes.
- Whisk in chicken broth, mushrooms and 2 cups water.
- Bring to a boil, reduce heat and simmer till mushrooms have softened, about 10 minutes. Stir in greens and/or bok choy, and green onions. Stir in miso paste until well combined, about 1-2 minutes.
- Stir I wontons until cooked through, appx 2-3 minutes

The broth is finished with touch of fish sauce. Bring to a boil over high heat, then reduce heat to maintain a bare simmer and cover. Add the spring onion stalks together with the smashed garlic cloves. When it boils, remove the spring onions. You can leave the garlic in if you wish.
